nutritionDaylight Saving Time indicates a shift from darkness to light, from winter to spring, from dormancy to blossoming.  Spring brings with it new growth. For us, it is often a time of renewal. We are also experiencing an awakening and a shift after the darkness of winter.

One of the healthiest ways to renew our bodies in spring is to eat fresh, seasonal fruit and vegetables. The Food Journal and Food, Nutrition and Science reports that seasonal  produce is more nutrient dense because it can be eaten immediately, preserving the vitamins and minerals. The earth offers a cornucopia of delicious, beautiful spring fruits and vegetables for us to consume for our health and wellness.  Here is a partial list of some of the delightfully nutritious, delicious vegetables available in spring.

  • Artichokes
  • Asparagus
  • Apricots
  • Fava beans
  • Peas
  • Garlic scapes
  • Mint
  • Navel oranges
  • Strawberry
  • Rhubarb

How can you know whether something is in season? Ask the local farmer at your farmers’ market, or the produce manager at your store. They will know exactly when is the best time to buy every morsel. For a more complete list, click here:

Making a Good Salad for Spring

One idea to consider for the spring is to make your own healthy salad. This can work with many great ingredients:

  • Use 12 ounces of spinach
  • Pint of strawberries
  • One pitted and diced avocado
  • Slice one stalk of celery and cut
  • Quarter-cup of walnuts
  • Add two tablespoons of lime juice to the mix
  • Be sure to add about a third-cup of olive oil

This is used to provide you with flavors that are not only lively and reflective of the spring season but to also help you get the nutrients your body could use. Spinach will provide you with more fiber to help your digestive system while strawberries have plenty of antioxidants. You can also get healthy fats out of avocados & walnuts.
